Made according to the traditional method using the wine “Dona Fátima” as base, this wine has a thin bubble, fruit and brioche aromas, with a fabulous acidity that makes it versatile for food pairing or to drink at any time.

Winemaking Process
Manual harvesting in small 15kg cases to respect the integrity of the grapes. Gently crushed with pneumatic presser. From the delicate crushing we take the most noble part of the juice which, after a static clarification, is fermented with temperature control. Then it stages for 18 months “sur lie”, after the second fermentation inside the bottle.
Tasting Notes
Citrus colour with a delicate and thin bubble
Fruity aromas with citrus nuances. The aromatic complexity get more developed with the tasting, where you will find some hints of honey.
The acidity is firm and gives freshness to the wine, all with a lot of balance and elegance.
Food Pairing
As an appetizer and also excellent as a versatile food pairing wine. Best consumed at the temperature of 6ºC to 8ºC.
